Nix The Fryer And Go Green

It is that time again; time for good food——good seafood to be exact. And there’s nothing like a plate full of hot, crispy, fried shrimp or a delicious Shrimp Po Boy on a soft bun, right? Not for everyone. Many are turning to healthier food choices. That shrimp can still be on the plate—but with a twist.  Here is a recipe that will please shrimp lovers and the health conscious. 

California Shrimp Salad

Preparation Time15 min
Cook time: No cooking!
Yield: 4 servings

Ingredients:

1 lb. cooked Shrimp, peeled and deveined
1/2 bunch Water cress
12 Lettuce Leaves
12 Grapefruit Sections
1 Avocado
1/4 cup French dressing

Directions:

Arrange several lettuce leaves and water cress on each of 4 pre-chilled plate. Cut avocado into crescent-shaped slices. Skin grapefruit and pull part sections. Arrange alternate slices of avocado and grapefruit around edge of plates. Place shrimp in center of each salad plate. Pour French dressing lightly over each shrimp salad. Sprinkle with paprika. Serve cold.
